Comet Cookies

Ingredients
- 150 g dark chocolate couverture
- 125 g butter
- 200 g powdered sugar
- 1 egg yolk
- 200 g hazelnuts (ground)
- 50 g flour
- 50 g cornstarch
- 200 g marzipan base
- 100 g powdered sugar
- 2 drops bitter almond flavoring
- red food coloring
- 100 g apricot jam
- sugar for dusting

Melt chopped chocolate couverture in a double boiler, then let it cool slightly. Cream butter with powdered sugar and egg yolk, then fold in the chocolate. Knead in ground hazelnuts, flour, and cornstarch; wrap dough in plastic wrap and refrigerate for about 1 hour.

Roll out the dough between two sheets of cling film to a thickness of about 4 mm. Cut comet shapes and place them on a baking sheet lined with parchment paper. Bake in a preheated oven at 180°C for about 8-10 minutes. Remove and let cool.

Knead marzipan base with powdered sugar and bitter almond oil, then color it red with food coloring. Cut marzipan into comet shapes like the cookies. Warm apricot jam, strain through a sieve, and brush the cookies with it. Place the marzipan comets on top and allow to dry. Finally dust with sugar.
