Cheese-Fig Quiche

Ingredients
- 250 g filo dough
- 2 tbsp olive oil (for the pan and dough)
- 1 handful thyme
- 200 g goat fresh cheese
- 200 ml whipping cream
- 80 g grated hard goat cheese
- 3 eggs
- Salt
- pepper (from grinder)
- 8 figs
- 1 tsp liquid honey
Instructions

Preheat oven to 180°C fan.

Brush tart tin with oil and line with filo sheets. Brush each sheet with oil and leave a slight overlap at the edges.

Rinse thyme, shake dry and pluck leaves. Whisk goat fresh cheese, cream, hard goat cheese, eggs, salt and pepper until smooth. Spread cheese mixture over the base. Wash figs and halve them. Set aside 3 halves for garnish; press remaining halves into the tart with cut side up and indent lightly. Drizzle honey on top and bake in oven for about 40 minutes until golden brown.
