Chanterelle Omelette

Ingredients

  • 1 onion
  • 1 Garlic clove
  • 500 g chanterelles
  • 150 g air‑dried sausages (e.g. Kaminwurz or salami)
  • 2 tbsp butter
  • 10 eggs
  • 60 ml whipping cream
  • 1 handful freshly chopped parsley
  • Salt
  • Pepper (freshly ground)
  • nutmeg

Instructions

    Preheat the oven to 180°C with both fan and top heating.

    Peel and finely dice the onion and garlic. Clean the chanterelles thoroughly and cut into pieces. Dice the sausage as well, then sauté the onion, garlic, sausage, and butter in a large, oven‑proof pan until translucent. Add the chanterelles and cook for 2–3 minutes.

    Meanwhile whisk the eggs with cream and parsley, seasoning heavily with salt, pepper, and nutmeg. Pour over the mushroom mixture and bake in the oven for 10–15 minutes until golden brown and set. Carefully slide onto a plate and serve cut into pieces.
