Ingredients
- 2 lemons, juiced
- Salt
- freshly ground pepper
- 8 tbsp olive oil
- 6 small tender artichokes (60–80 g each)
- 100 g Parmesan
Instructions

Whisk lemon juice, salt, pepper and olive oil in a large bowl.

Remove outer leaves from the artichokes, trim stems, discard tips, halve lengthwise and remove the choke. Slice artichokes very thinly along their length.

Immediately toss sliced artichokes with the dressing to prevent discoloration, arrange on a plate and crumble parmesan over them.
