Celery Vegetable Relish
A hearty vegetable relish served on celery slices, highlighting the soothing properties of celery as a blood purifier and diuretic.
Ingredients
- 500 g celery root (1 celery root)
- 125 ml classic vegetable broth
- 200 g small zucchini (1 small zucchini)
- 50 g onions (1 onion)
- 1 Garlic clove
- 1 red chili pepper
- 2 dried tomatoes (without oil)
- 4 pitted green olives
- Salt
- Pepper
- 2 tsp white wine vinegar
- 1 tsp Olive oil
Instructions

Clean, wash celery root and cut into four equal thick slices, then peel.

Bring vegetable broth to a boil in a wide pot and simmer covered over medium heat for 10 minutes with the celery slices.

Meanwhile, wash, clean zucchini and dice into about 5 mm cubes.

Peel onion and garlic and finely dice them.

Wash, core, and finely chop the chili pepper.

Slice dried tomatoes into narrow strips.

Remove celery slices from broth with a slotted spoon, place on two large plates, and keep warm.

Add onion, chili, garlic, and tomatoes to the broth. Cover and steam over medium heat for 8–10 minutes.

Cut olives into rings. Add zucchini cubes to the pot and cook for another 2–3 minutes. Season with salt, pepper, vinegar, and olive oil. Arrange on celery slices and serve.
