Shrimp Soup

Ingredients

  • 8 large shrimp
  • 2 cloves garlic
  • 10 g ginger (1 piece)
  • 1 stalk lemongrass
  • 1 tbsp lobster butter
  • 1 tbsp red curry paste
  • 1 l fish stock
  • 150 g oyster mushrooms
  • 3 stems lemon basil
  • 1 splash lime juice
  • Salt
  • 1 tbsp fish sauce

Instructions

    Rinse shrimp under cold water and drain.

  2. 2.

    Peel and finely chop garlic and ginger. Wash lemongrass, pat dry, and press to release flavor.

    Heat lobster butter in a pot and sauté lemongrass, ginger, curry paste, and garlic. Deglaze with stock and simmer covered for about 20 minutes over medium heat.

    Meanwhile clean mushrooms. Strain soup through a fine sieve, return to pot, reheat, add shrimp and mushrooms, and let cook gently for about 5 minutes on low heat.

    Wash basil, shake dry, chop leaves, and add to soup.

    Season soup with lime juice, salt, and fish sauce.
