Celery Surimi Salad

Ingredients
- 300 g surimi
- 1 stalk small celery
- 2 lemons
- 200 g Sour Cream
- 2 tbsp white wine vinegar
- 4 Tbsp sunflower oil
- Salt
- pepper (ground)
- 1 bunch pimpinelle (or other fresh herbs)

Slice the surimi into thin strips. Separate the celery stalks from the stems, clean, wash and cut into fine ribbons, reserving some of the green leaves. Peel one lemon and slice it thinly.

For the salad dressing squeeze the second lemon and mix with sour cream, then add vinegar and oil, seasoning with salt and pepper. Add all ingredients together, sprinkle with washed pimpinelle leaves, and garnish with celery greens.
