Ingredients

  • 2 tsp grated orange zest
  • 120 ml orange juice (juice of 2 oranges)
  • 150 g crème fraîche
  • salt to taste
  • 400 g celery root
  • 1 apple
  • 2 tbsp sunflower sprouts (or others)
  • 2 dried apricots
  • 2 tsp pink peppercorns

Instructions

    Whisk together orange juice, orange zest, crème fraîche, and a pinch of salt.

    Peel, wash, and cut the celery into fine strips or grate coarsely. Immediately fold the celery strips into the sauce.

    Wash the apple, quarter it, remove the core, slice into strips, and immediately add to the celery salad.

    Rinse the sprouts briefly and drain. Slice the apricots finely, combine with pink peppercorns and the sprouts, and mix into the salad.
