Celery Soup

Ingredients

  • 1 stalk leek
  • 2 onions
  • 500 g celery sticks
  • 50 g butter
  • 1.2 l Vegetable broth
  • 50 g flour
  • 400 g Stilton cheese
  • 200 g whipping cream
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp chopped parsley

Instructions

    Wash, trim and finely chop the white and light green parts of the leek.

    Peel and dice the onions.

    Wash, trim and finely chop the celery.

  4. 4.

    Sauté 200 g of the celery with the onion and leek in hot butter for about 10 minutes, then dust with flour, stir, and sauté briefly. Add the vegetable broth, puree the soup, then crumble in the cheese. Bring to a gentle boil while stirring until thickened.

    Turn down the heat, add the remaining celery and cream, simmer gently for another ~5 minutes, season with salt and pepper, and serve sprinkled with parsley.
