Ingredients

  • 300 g mixed wild herbs (e.g., nettle, dandelion, plantain)
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 Spring Onions
  • 1 clove garlic (finely chopped)
  • 0.125 l white wine
  • 1 l vegetable broth
  • Salt
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)
  • 150 ml whipping cream
  • 2 tbsp crème fraîche

Instructions

    Wash, trim and slice the spring onions into rings. Sauté with garlic in hot butter and dust with flour. Deglaze with white wine and add broth.

    Simmer for about 20 minutes while stirring occasionally. Then add cream, bring to a boil and reduce slightly, then add the chopped herbs. Puree, stir in crème fraîche, and season with salt, pepper, and nutmeg.
