Ingredients
- 350 g cauliflower florets (small pieces)
- 100 g celery cubes
- 1 onion
- 1 Garlic clove
- 50 g quark
- 100 g mayonnaise
- Salt
- Pepper
- 4 tomatoes
- watercress (for garnish)
- 16 slices whole‑grain bread (smaller)
Instructions

Cook the celery together with the cauliflower in plenty of salted water for about 5–8 minutes, drain and let it dry well. Whisk the mayonnaise with the quark until smooth, season with salt and pepper, fold in the vegetables and taste again.

Wash the tomatoes and slice them. Spread one eighth of the salad on half of the bread slices and sprinkle with chives. Top the other half with tomatoes and also spread the salad. Cover each side with a slice of bread, cut in halves and serve on a plate.
