Ingredients
- 1 small cauliflower (cut into florets)
- 400 g Tomatoes
- 3 tbsp clarified butter
- 1 tin saffron strands
- 1 tsp turmeric
- 0.5 tsp ginger powder
- 0.5 tsp cumin
- Lemon juice
- Salt
- black pepper (freshly ground)
- 2 tbsp coriander leaves
- 2 tbsp crème fraîche

Cook the florets in boiling salted water for about 5 minutes, then drain and set aside. Briefly blanch the tomatoes, shock them, peel, quarter, seed, and slice into strips.

Heat the clarified butter and sauté the saffron strands, turmeric, ginger, and cumin; add the cauliflower and cook for about 4 minutes, seasoning with salt and pepper. Stir in lemon juice, bring to a boil, then serve garnished with coriander leaves and a dollop of crème fraîche.
