Ingredients

  • 600 g well-aged roast beef
  • 1 Tbsp clarified butter
  • Salt
  • Pepper (freshly ground)
  • juice of one lemon
  • 6 tbsp flaxseed oil
  • Salt

  • 2 Spring Onions
  • 4 radishes
  • coriander (for garnish)

Instructions

    Sear the seasoned roast beef in a very hot, oven-safe pan with clarified butter on each side until browned, then finish cooking in a preheated oven at 180°C for about 15 minutes. Remove, season with salt and pepper, and let cool.

    For the vinaigrette, whisk lemon juice and salt well, then slowly add oil while seasoning with pepper. Wash and trim spring onions, cutting only the green parts into fine rings or strips. Wash radishes, trim, and finely dice them. Stir both into the vinaigrette.

    Thinly slice the roast beef against the grain, arrange on plates. Drizzle the vinaigrette over the meat and garnish with coriander leaves.
