Ingredients
- 225 g coconut palm sugar
- 5 eggs
- 1 tsp vanilla powder
- 500 g spelt whole‑grain flour
- 1 tsp Baking powder
- 2 tsp Cinnamon
- 75 g cocoa powder (5 tbsp)
- 250 g butter (room temperature)
- 100 ml milk (3.5% fat)
- 100 g walnut kernels
- 3 tart apples (e.g., Granny Smith)

Beat sugar with eggs and vanilla powder until fluffy.

Mix flour, baking powder, cinnamon, and cocoa powder. Add butter, milk, and the dry mixture to the egg mixture and blend into a smooth batter.

Coarsely chop walnuts. Peel, quarter, core, and grate apples; fold them and the walnuts into the batter. Spread onto a parchment‑lined sheet pan and bake in a preheated oven at 180 °C (160 °C fan, gas: level 2–3) for 55–60 minutes (test with a skewer).
