Cassata Ice Cream

Ingredients
- 800 g Ricotta
- 500 ml heavy cream
- 300 g sugar
- 60 ml Maraschino liqueur
- 400 g candied fruit (mixed)
- Kakaopowder (for dusting)
- 500 g cherries (pitted)
- 80 g powdered sugar
- 2 tbsp Amaretto
- 1 tsp Cornstarch
- 100 ml cherry juice

Whisk the ricotta until creamy. Beat the cream stiffly. Melt the sugar with a little water in a saucepan, remove from heat, let cool slightly and fold in half of the liqueur, then stir into the ricotta; dice the candied fruit, mix it in as well, and gently fold in the whipped cream. Pour the mixture into a loaf pan lined with plastic wrap and smooth the surface. Place the parfait in the freezer overnight.

Add cherries and their juice to a saucepan, sprinkle powdered sugar over them, stir, and bring to a boil once.

Whisk cornstarch with a little water until smooth, add it to the cherry mixture, and simmer while stirring.
