Carrots with Mustard and Maple Syrup

The carrots with mustard and maple syrup from Spoonsparrow make a great side dish and main course!

Ingredients

  • 800 g small bundles of carrots
  • 2 Garlic cloves
  • 5 sprigs lemon thyme
  • 30 g coarse mustard (2 tbsp)
  • 1 tsp maple syrup
  • Salt
  • Pepper
  • 2 tbsp Orange juice
  • 2 tbsp olive oil

Instructions

    Clean and peel the carrots, leaving the green tops intact. Peel the garlic and finely dice it. Wash the thyme, pat dry, set aside the tips, and roughly chop the rest.

    Whisk together mustard, maple syrup, chopped thyme, salt, pepper, orange juice, garlic, and oil. Toss the carrots in this mixture, place them in a baking dish, and bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for 20 minutes, turning occasionally. Arrange on a plate and sprinkle with thyme tips.
