Ingredients
- 4 beef marrow bones
- 4 slices of toast bread
- 2 Eggs
- 30 g parsley
- Salt
- pepper (ground)
- flour
Instructions

Step 1: Separate the beef marrow from the bones, finely chop or grind through a meat grinder. Wash the parsley, shake dry and finely chop.

Step 2: Remove crusts from the bread and cut into small pieces. Add the eggs and parsley and mix everything. Stir in the marrow, salt and pepper and knead into a dough.

Step 3: Divide the dough into two halves and on a floured work surface roll each into two narrow rolls about 2 cm thick. Cut into pieces and shape into small dumplings with floured hands.

Step 4: Let the dumplings simmer in salted water for about 15 minutes, then lift them out, drain and set aside.
