Ingredients
- 500 g carrots
- 1 tsp Olive oil
- 500 ml vegetable broth
- 2 Bay leaves
- 1 tsp ginger
- 100 ml Buttermilk
- Salt
- black pepper (freshly ground)

Wash, peel, and chop the carrots. Heat oil in a pot and sauté the prepared vegetables for about 3 minutes while stirring until translucent.

Add the broth, bring to a boil. Add bay leaves and ginger, cover and simmer over low heat for about 15 minutes. Remove the bay leaves. Stir in buttermilk, blend the soup, season with salt and pepper, and serve hot.
