Pea soup with mini cabanossi not only provides plenty of protein for growth but also a lot of plant-based iron.

Ingredients

  • 150 g onions (3 onions)
  • 240 g lettuce (3 lettuces)
  • 45 g butter (3 tbsp)
  • 1.2 kg peas (frozen)
  • soy sauce
  • Pepper
  • 300 g mini cabanossi
  • 300 ml milk (1.5% fat)
  • 450 g whole wheat bread (10 slices)

Instructions

    Peel onions and slice into thin rings. Wash lettuce, shake dry, clean and cut each leaf into eighths.

    Heat butter in a large pot, sauté onions until translucent. Add lettuce and cook 3–4 minutes until it wilts.

    Add frozen peas and heat for about 5 minutes until thawed.

    Pour in 300 ml water and blend everything with an immersion blender. Season with soy sauce and pepper. Add cabanossi to the soup and reheat.

    Meanwhile, pour milk into a tall vessel, froth with a milk frother, and stir into the soup. Serve the soup with whole wheat bread.
