Ingredients

  • 1 l meat broth
  • 40 g soft butter
  • 50 g semolina
  • 1 egg
  • Salt
  • Pepper
  • nutmeg
  • 2 tbsp chopped chives

    Whisk the butter with salt and nutmeg until fluffy, then fold in the egg. Stir in the semolina. Let the dough rest for 10 minutes.

    Bring the broth to a boil, seasoning with salt and pepper.

    Using two teaspoons dipped in water, scoop portions of the semolina dough and shape them into elongated dumplings. Drop them into the boiling broth and let them simmer gently for about 15 minutes until cooked through. Plate the soup with dumplings on bowls or plates, sprinkling chopped chives on top.
