Carrot Quiche

Ingredients

  • 150 g flour
  • 1 pinch salt
  • 75 g butter
  • 1 egg
  • plant oil (for the quiche)
  • flour (to work with)
  • 400 g baby carrots
  • 200 ml whipping cream
  • 200 g crème fraîche
  • 100 g grated cheese (e.g., Gouda)
  • 4 eggs
  • Salt
  • Pepper
  • nutmeg

Instructions

    Sift flour onto a clean surface, mix in salt and create a well in the center. Cut cold butter into small pieces, distribute around the well, add the egg, pour 2–3 tbsp lukewarm water, and use a knife to cut through all ingredients until small dough crumbs form. Quickly knead with hands into a dough, shape into a ball, wrap in cling film and refrigerate for about 30 minutes.

    Preheat oven to 180 °C fan. Brush the quiche tin with oil.

    Peel carrots and halve them lengthwise. Whisk cream, crème fraîche, cheese and eggs together for the filling. Season well with salt, pepper and nutmeg.

    Roll out dough on a floured surface and line the tin, forming a rim. Arrange carrot slices over the base and pour the filling on top. Bake in the oven for about 45 minutes until golden brown.

    Serve warm or cooled, sliced into pieces.
