Ingredients
- 50 g shelled almond kernels
- 100 g fresh carrot greens
- 2 Garlic cloves
- 75 g Parmesan cheese
- 150 ml olive oil
- Salt
- ground pepper
Instructions

Roast the almonds in a dry pan until golden yellow, remove and let cool. Rinse the carrot greens, shake off excess water, pluck stems and roughly chop. Peel the garlic cloves and finely grate the Parmesan.

Blend the carrot greens, almonds, and garlic in a food processor. Gradually add olive oil while blending until a creamy pesto forms.

Finally fold in the grated Parmesan and season with salt and pepper to taste.
