Carrot Cake Cookies

Ingredients
- 5 g ginger (1 piece)
- 200 g carrots
- 200 g Apples (1 apple)
- 70 g Walnuts
- 40 g Dates (pitted)
- 3 tbsp Coconut oil
- 90 g Rolled oats (fine)
- 150 g Whole wheat flour
- 1 tsp Baking powder
- 1 tsp cinnamon
- 0.5 tsp Salt
- 4 tbsp Maple syrup

Peel and finely grate the ginger. Peel the carrots. Wash and core the apple. Roughly grate the apple and carrots. Chop the walnuts and dates. Put coconut oil in a saucepan and melt it over low heat.

Mix rolled oats, flour, baking powder, cinnamon and salt. Add walnuts, dates, apple, carrots, ginger, coconut oil and maple syrup and mix thoroughly until a dough is formed.

Shape 12 roughly equal-sized cookies from the dough and place them on a baking sheet lined with baking paper in a preheated oven at 180 °C (160 °C convection; Gas: level 2–3) for about 35–40 minutes. Let the Carrot Cake Cookies cool before serving.
