Ingredients

  • 1 stalk leek
  • 2 tbsp vegetable broth
  • 500 g black radish
  • 2 small pears
  • 2 tbsp lemon juice
  • 2 tbsp yogurt
  • 2 tbsp Sour cream
  • 1 tbsp walnut oil
  • 2 tbsp Rapeseed oil
  • 1 tsp horseradish
  • Salt
  • ground pepper (from the mill)
  • 2 smoked trout fillets

Instructions

    Clean, wash and slice the leek into thin rings; steam in a pan with vegetable broth for about 5 minutes covered.

    Peel and grate the radish finely. Wash the pears, quarter them, remove the core and cut into thin slices. Drizzle immediately with lemon juice. Gently combine the leek, radish, and pear in a bowl.

    Whisk together yogurt, sour cream, oils, horseradish, salt, and pepper; fold into the salad. Distribute onto plates. Tear the trout fillets into bite‑sized pieces and arrange on top of the salad.
