  • 1 green cooking banana (from Dole)
  • 1 breadfruit
  • 1 ripe guava
  • allspice
  • Brown rum

  • 3 eggs
  • 2 Tomatoes
  • 4 red shallots
  • garlic
  • Tapioca flour
  • 5 limes

Instructions

    Cut breadfruit into fries and fry. Season with a mix of salt, curry, and allspice.

    Slice the cooking banana thinly and fry. Mix pine nuts and thyme into a coating. Salt, pepper, and flour the skinless fish; dip in egg and coat. Fry in a pan.
