Carp on Zucchini Vegetable

Ingredients
- 1 carp (about 1.5 kg, have it filleted and portioned by the dealer)
- juice of one lemon
- Salt
- Pepper (freshly ground)
- 400 g small zucchini
- 2 shallots
- 1 bundle arugula
- 2 Garlic cloves
- 4 tbsp olive oil
- 150 ml dry white wine

Drizzle the fish fillets with lemon juice and season with salt and pepper. Wash, trim, and roughly grate the zucchini. Peel and finely chop the shallots. Wash, rinse, pat dry, and cut the arugula into strips. Peel the garlic.

Heat 2 tbsp olive oil in a pan, sauté the grated zucchini and shallots for 5 minutes. Fold in half of the arugula, squeeze one garlic clove through a press, and season with salt and pepper.

Pour wine into a wide pot with a steamer insert, top up with water to about 3 cm, and bring to a boil.

Distribute the vegetables on the steamer insert and place the carp fillets on top. Press the second garlic clove through the press, mix with the remaining oil and arugula, and spread over the fish. Cover and steam for 6-8 minutes depending on fillet thickness. Serve with rice.
