Caramelized Radicchio with Oranges

Ingredients

  • 2 heads of radicchio
  • 1 onion
  • 2 untreated oranges
  • 2 tbsp grape seed oil
  • 1 tbsp honey
  • 1 tsp coriander seeds
  • 20 ml orange liqueur
  • 1 tsp freshly chopped coriander leaves
  • Lemon juice
  • 1 orange (for garnish)

Instructions

    Wash, trim, quarter the radicchio and leave most of the stem. Peel and slice the onion into thin rings. Cut one orange into segments for garnish; zest a second orange and squeeze its juice.

    Sauté the radicchio and onions in hot oil on all sides for about 5 minutes until soft. Drizzle with honey, allowing it to caramelize slightly. Stir in coriander seeds, then deglaze with orange liqueur and freshly squeezed orange juice. Let simmer for 2-3 minutes, add chopped coriander leaves, season with lemon juice, and serve garnished with orange segments.
