Cantuccini with Hazelnuts

We love cantucci! Taste the Italian classic in a nutty version: Cantuccini with hazelnuts from Spoonsparrow.

Ingredients

  • 200 g hazelnuts
  • 1 untreated orange (zest and juice)
  • 400 g flour
  • 1 pinch salt
  • 0.5 sachet baking powder
  • 1 sachet vanilla sugar
  • 250 g sugar
  • 4 eggs
  • 1 egg yolk (for brushing)

Instructions

    Roast the hazelnuts without oil and roughly chop them.

    In a bowl mix flour with salt, baking powder, vanilla sugar, and sugar; add the eggs, orange zest, and 1–2 tbsp orange juice to form a smooth dough, then fold in the hazelnuts.

    Roll the dough into two logs about 6 cm wide, place on a greased baking sheet, flatten slightly, and brush with egg yolk.

  4. 4.

    Bake in a hot oven at 180°C for about 15 minutes until lightly browned. Remove, brush with remaining orange juice, slice into ~1 cm thick pieces, return to the sheet and bake another 10–15 minutes until crisp, turning once.
