Florentiner Cookies

Ingredients
- 100 g sugar
- 2 tbsp vanilla sugar
- 30 g Butter
- 2 tbsp honey
- 125 ml whipping cream
- 125 g candied fruit (e.g. cherries, orange peel, lemon peel)
- 2 tbsp flour
- 60 g chopped almonds
- 60 g almond slivers
- 100 g dark chocolate (chopped)
- 1 tsp plant oil

Add sugar, vanilla sugar, butter, honey and cream to a small saucepan and bring to a boil while stirring. Everything should dissolve well and lightly caramelize. Add the candied fruit and flour, stir well. Fold in the almonds and remove from heat.

Preheat oven to 180°C fan.

Using two spoons, place about cherry-sized mounds with enough space on a baking sheet lined with parchment paper. Bake for 8-10 minutes until golden brown and crisp, then cool completely on a wire rack.

For decoration melt the chopped chocolate with oil over a double boiler. Brush or spoon the liquid glaze onto the smooth underside of each Florentiner. If desired, create a decorative wave pattern with a fork and let dry.
