Filled Orange Cookies

Ingredients

  • 150 g diced orangeat (fresh orange pieces) and butter
  • 250 g flour
  • 50 g sugar
  • 1 packet vanilla sugar
  • 1 tsp orange zest
  • 1 egg (medium size)
  • 2 tbsp orange liqueur
  • 100 g orange marmalade
  • 250 g powdered sugar
  • 5 tbsp orange juice
  • candied orange peel

Instructions

    Finely chop the orangeat in a food processor.

    Mix flour, sugar, vanilla sugar and orange zest in a bowl. Add the egg, butter pieces, orange liqueur and 1 tbsp cold water. Scrape everything with a knife until dry crumbs form, then quickly knead by hand into a smooth dough. Fold in the chopped orangeat.

    Divide the dough into three portions and roll each into a log. Freeze for 1 hour. Slice the logs into 4‑5 mm thick rounds. Place on parchment-lined baking sheets. Bake at 175 °C (gas: level 2–3, fan: 160 °C) for about 8‑10 minutes. Cool on a wire rack.

    Assemble each pair of cookies with orange marmalade. Sift powdered sugar into a bowl and whisk with orange juice to make a glaze. Brush the cookies with the glaze and decorate with candied orange pieces.
