Kaiserschmarren

Ingredients
- 130 g flour
- 2 tbsp sugar
- 1 packet vanilla sugar
- 1 pinch salt
- 6 Eggs
- 250 ml milk
- 2 tbsp raisins
- 20 ml rum
- butter for baking
- 1 tbsp powdered sugar
- powdered sugar for dusting
- 2 tbsp almond slivers
- 1 kg apples
- 3 tbsp sugar
- cinnamon powder (1 tsp)
- clove powder (1 tsp)
- 1 tsp grated lemon zest
Instructions

Wash apples, quarter them, remove cores and cut into pieces. Simmer apple pieces with 3 tbsp water, sugar, lemon zest and spices for a few minutes until the apples break down and soften, taste and set aside.

Separate eggs. Whisk flour, salt, powdered sugar, sugar and yolks well and let rest for 30 min. Soak raisins in rum. Beat egg whites stiffly.

Whisk the batter thoroughly again and fold in the beaten egg whites. In a large ovenproof pan with hot butter fat, bake one thick pancake, flip it and finish baking.

Tear the batter into small pieces, add rum-soaked raisins and almond slivers, dust with powdered sugar and caramelize in a hot oven at 220°C.

Dust the Kaiserschmarren with powdered sugar before serving and serve with apple sauce.
