- 600 g chestnuts
- 1 vanilla pod
- 150 g sugar

Score the chestnuts crosswise, place them on a baking sheet and roast at 250°C for 30 minutes. Peel the chestnuts whole.

Heat the sugar in a pan until it melts, stir in the extracted vanilla bean seeds, and caramelize the whole chestnuts in the syrup.
