Camembert Pockets with Pear and Lingonberries

Ingredients
- 350 g flour
- 1 tsp salt
- 2 tbsp oil
- 200 ml water
- 200 g Camembert
- 200 g pears (1 pear)
- 2 tbsp lingonberries (from jar)
- flour (for rolling out)
- 1 Egg white

Mix flour and salt. Add oil and water, then knead with the paddle attachment of a hand mixer until all ingredients are incorporated. Knead by hand into a smooth dough. Shape dough into a ball, cover or wrap in foil, and let rest for about 30 minutes.

Cube the Camembert. Quarter the pear, peel and core it, then cube it as well. Mix Camembert, pear, and 1 tbsp lingonberries together.

Preheat oven to 225°C (gas: level 4-5, convection 200°C). Line a baking sheet with parchment paper.

Roll dough on a lightly floured surface into a thin rectangle about 40 x 50 cm. Cut out circles roughly 12 cm in diameter.

Place about 1 tsp filling in the center of each circle. Brush dough edges with egg white. Fold dough over the filling, press gently to seal, leaving a small opening that will be decorated with lingonberries after baking.

Arrange pockets on the baking sheet. Bake on the middle rack for 15-18 minutes. Let cool slightly and decorate with remaining lingonberries. Serve warm.
