Calamari Soup with Capers and Celery

Ingredients
- 800 g calamari rings
- 2 stalks celery
- 1 red bell pepper
- 1 chili pepper
- 40 g sun-dried tomatoes (in oil)
- 2 tbsp olive oil
- 1 tbsp Tomato Paste
- 100 ml White wine
- 800 ml fish stock
- 1 tbsp capers
- Salt

Wash and pat dry the calamari rings. Wash, trim, and cut the celery into pieces. Wash the bell pepper, halve it, remove seeds and white membranes, then dice small. Wash, trim, and finely chop the chili pepper. Drain the sun-dried tomatoes and roughly chop them.

Sauté the celery, bell pepper, chili, and tomatoes in hot oil. Stir in the tomato paste and deglaze with white wine. Add the fish stock and simmer gently for about 15 minutes. Add the calamari rings and capers, then simmer gently for another 10 minutes. Season with salt and serve.
