Chlodnik ogorkowo-mietowy (cold cucumber‑mint soup, Poland)

Ingredients

  • 1 salad cucumber
  • 1 onion
  • 1 tsp Olive oil
  • 2 tsp sugar
  • 400 ml Vegetable broth
  • Tabasco
  • 2 tsp lemon juice
  • Salt
  • black pepper (freshly ground)
  • 100 g yogurt
  • mint
  • Baguette

Instructions

    Wash, peel, halve lengthwise and pit the cucumber with a spoon. Slice the halves into thin rounds.

    Peel the onion, dice finely and sauté in hot oil in a pan until translucent. Add cucumber slices, sprinkle sugar, and lightly caramelize.

    Pour in the broth, bring to a boil, add mint, then blend until smooth. Let cool, season with Tabasco, lemon juice, salt, and pepper, taste, and refrigerate.

    Before serving fold in yogurt and serve in bowls.
