Caesar Salad

A classic salad featuring crispy turkey strips tossed with fresh romaine lettuce and a creamy yogurt dressing.

Ingredients

  • 1 small head romaine lettuce
  • 2 shallots
  • 2 Garlic cloves
  • 3 tbsp yogurt (3.5% fat)
  • 1 tbsp coarse Dijon mustard
  • 2 tbsp apple juice
  • 1 tbsp Sesame seeds
  • Salt
  • Pepper
  • 300 g Turkey breast fillet
  • 4 slices whole-grain toast
  • 2 tbsp Rapeseed oil
  • 50 g Parmesan cheese (block; 35% fat in the rind)

Instructions

    Clean, rinse, dry, and cut romaine lettuce into coarse strips. Peel, halve, and finely chop shallots. Press one garlic clove. Whisk together yogurt, mustard, apple juice, sesame seeds, shallots, and garlic for the dressing; season with salt and pepper.

    Rinse turkey breast, pat dry, and slice thinly. Dice toast very finely. Peel and mince a second garlic clove. Heat oil in a pan. Sauté garlic, turkey strips, and toast cubes over medium heat until crisp. Remove from pan and scatter over romaine lettuce.

    Arrange Caesar Salad on plates, pour dressing evenly over the top, then shave Parmesan thinly across the surface before serving.
