Baked Asparagus with Feta
Try baked asparagus with feta from Spoonsparrow!
Ingredients
- 1 kg green asparagus
- 1 tbsp honey
- Salt
- 1 onion
- 1 tbsp Olive Oil
- 80 g heavy cream
- 2 Eggs
- Salt
- Pepper
- nutmeg
- 200 g sheep cheese (feta)
- 2 tbsp finely grated parmesan
- 2 tbsp Whole wheat breadcrumbs
- 2 tbsp melted butter

Wash the asparagus, trim the woody ends and peel the lower third of each stalk. Cook the asparagus with honey in plenty of salted water for 2–3 minutes over medium heat.

Peel the onion and slice it into thin strips. Heat oil in a pan and sauté the onions until translucent. Place the onions and asparagus in a large greased baking dish or on a small sheet. Whisk together the cream and eggs, seasoning with salt, pepper and freshly grated nutmeg. Pour over the asparagus.

Crumb the sheep cheese over the gratin. Mix the parmesan with the breadcrumbs and stir in the butter. Knead into crumbs with your fingertips and scatter them over the dish. Bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for 15 minutes. Serve warm.
