Cabbage Parcels with Quinoa
The cabbage parcels with quinoa from Spoonsparrow are healthy and truly delicious!
Ingredients
- 8 large savoy cabbage leaves
- Salt
- 300 g quinoa
- 200 g tofu
- Pepper
- 1 tbsp Lemon Juice
- a pinch ground caraway
- a pinch ground allspice
- 100 ml Vegetable broth

Wash the cabbage and cut thick veins flat with a knife; blanch the leaves in boiling salted water for about 2 minutes. Remove, immediately shock in ice water, then drain. Rinse quinoa under hot water in a sieve, then cook according to package instructions.

Meanwhile, dice the tofu finely.

Combine tofu cubes with quinoa and season with salt, pepper, lemon juice, caraway, and allspice. Pat cabbage leaves dry with kitchen paper, spread the tofu mixture in the center of each leaf. Fold the edges over the filling, tie securely with kitchen twine, and arrange side by side in a baking dish. Pour broth over the parcels and bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 10–15 minutes. Serve hot.
