Steamed Salmon with Savoy Cabbage

Ingredients

  • 800 g savoy cabbage (1 small head)
  • 2 tbsp butter
  • Salt
  • black pepper (freshly ground)
  • 1 Organic lemon
  • 125 ml Vegetable broth
  • 100 g heavy cream
  • 500 g salmon fillet

Instructions

    Clean the cabbage, quarter it lengthwise, remove the core and cut each quarter into strips. Sauté the cabbage in hot butter over medium heat, seasoning with salt and pepper. Wash the lemon, dry rub it, grate the zest and squeeze out the juice.

    Stir the lemon zest into the cabbage. Pour in the broth and cream, cover and steam for about 15 minutes, tasting with half of the lemon juice, salt, and pepper to adjust seasoning.

    Divide the salmon into portions and drizzle with the remaining lemon juice.

    Bring 1 litre of salted water to a boil in a wide pot, add the salmon and simmer gently for 6–8 minutes until cooked through.

    Plate the salmon atop the cabbage.
