Cabbage, Apple & Lentil Dish
This Cabbage and Apple dish with red lentils and dates from Spoonsparrow is not just for vegans!
Ingredients
- 1 Shallot
- 400 g cabbage
- 200 g sour apples (1 sour apple)
- 50 g dried dates (pitted)
- 2 tbsp olive oil
- 200 g red lentils
- 300 ml Vegetable broth
- Salt
- Pepper
- 50 g hazelnuts
- 50 g arugula (0.5 bunch)
Instructions

Peel and finely chop the shallot.

Clean the cabbage, remove the tough core, wash, drain, and cut into thin strips.

Wash, dry, peel, quarter, core, and dice the apple. Halve, pit, and slice the dates.

Heat the oil in a large non-stick pan. Briefly sauté the shallot until translucent.

Add the cabbage and sauté for about 5 minutes. Stir in the apple, lentils, and dates and sauté for another 2 minutes over medium heat.

Pour in the broth and simmer for a further 10 minutes. Season with salt and pepper.

While the cabbage is cooking, roughly chop the hazelnuts and toast them in a small pan without fat until they start to smell fragrant. Remove from heat.

Clean, wash, and shake the arugula dry, then chop it. Sprinkle with the hazelnuts and serve over the vegetables.
