Butter Cookies

Ingredients
- 250 g spelt flour Type 1050
- 75 g powdered sugar (from raw cane sugar)
- 1 pinch salt
- 0.5 Organic lemon
- 0.5 Vanilla pod
- 150 g cold butter
- 1 egg yolk
- 2 tbsp milk (3.5% fat)

Mix the flour with powdered sugar and salt for the dough. Rinse the lemon hot, dry rub it and grate its zest. Split the vanilla pod lengthwise and scrape out the seeds. Add both to the mixture.

Add butter in small flakes and quickly work everything into a smooth dough. Cover the dough and refrigerate for about 30 minutes.

Roll the dough on a floured surface to a thickness of 0.5 cm, cut out Christmas motifs with cookie cutters, and place them on a baking sheet. Whisk the egg yolk with milk and brush the cookies with it. Bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for 8–12 minutes until golden brown.

Transfer the butter cookies immediately to a cooling rack and let them cool.
