The burgers from Spoonsparrow provide a large portion of protein and well-utilized iron.

Ingredients

  • 100 g mayonnaise
  • 100 g Yogurt (3.5% fat)
  • 2 tbsp ketchup
  • paprika powder, sweet
  • 1 splash Lemon juice
  • Salt
  • Pepper
  • 2 handfuls mixed leafy greens (e.g., endives, radicchio, lettuce)
  • 1 beef tomato
  • 1 Red Onion
  • 600 g ground beef
  • 1 tbsp sharp mustard
  • 1 small onion
  • 1 Garlic clove
  • 4 burger buns

Instructions

    Whisk mayonnaise with yogurt, ketchup, a touch of paprika, lemon juice, salt and pepper. Taste the sauce and chill until ready.

    Wash greens, dry thoroughly and tear into bite-sized pieces. Wash tomato, remove stem, slice thinly. Peel red onion and cut into narrow rings.

    Preheat grill. Place ground beef with mustard in a bowl. Peel and finely dice onion and garlic. Add to beef, mix well, season with salt and pepper. Form 4 patties and grill on hot griddle for 3–4 minutes per side. Halve buns and toast briefly on grill.

    Spread a little sauce on the underside of each bun. Layer some greens, a patty, tomato slices and onion rings. Top with the other half of the bun and serve.
