Bulgur Vegetable Salad

Ingredients

  • 200 g bulgur
  • 300 ml Vegetable broth
  • 250 g tomatoes
  • 2 chili peppers
  • 0.5 bunch scallions
  • 1 Zucchini
  • 1 stalk Celery
  • 1 bunch parsley (20 g)
  • 3 tbsp Lemon juice
  • 4 tbsp olive oil
  • Salt
  • Pepper

Instructions

    Place bulgur in a pot, pour in the broth, bring to a boil, remove from heat and let it soak for 30 minutes. Cut tomatoes crosswise, rinse, peel, halve, deseed, and finely chop. Slice chili peppers lengthwise, remove seeds, and dice finely. Wash scallions, trim, and slice into rings.

    Wash zucchini, trim, and cube. Wash celery, trim, and cut into small pieces. Wash parsley, shake dry, pluck leaves, and roughly chop. Mix parsley, lemon juice, olive oil, salt, pepper, and vegetables with the bulgur.

    Let the bulgur vegetable salad rest for at least 20 minutes, then season again with salt and pepper before serving.
