Ingredients

  • 150 g fine bulgur
  • 250 ml unsweetened sour cherry juice
  • 1 Spring onion
  • 4 sprigs Mint
  • 4 sprigs Parsley
  • 2 Tomatoes
  • 1 small red bell pepper
  • 1 large cucumber
  • 2 tbsp plant oil
  • 1 tsp Honey
  • 1 tsp lemon juice
  • Salt
  • black pepper (ground)

    Pour the bulgur into a bowl with the cherry juice and let it soak covered for about 45 minutes.

    While the bulgur soaks, wash and finely chop the spring onion. Rinse the mint and parsley, shake dry, and finely chop the leaves. Wash the tomatoes, cut off the stems, quarter them, remove the seeds, and dice the flesh. Dice the bell pepper after washing and trimming. Cut the cucumber in half lengthwise, remove the seeds, and dice it.

    Whisk together the oil, honey, lemon juice, salt, and pepper, then combine with the remaining salad ingredients. Let the mixture rest for at least 30 minutes, taste again, and serve.
