Brown Dough Dumplings with Fruit Filling

- 250 ml milk
- 1 tbsp butter
- a pinch of salt
- 350 g flour
- 1 egg
- 4 plums
- 4 Apricots
- 100 g raspberries
- 1 apple

Heat the milk, butter and salt, then add the flour while stirring; work the dough with a wooden spoon until it lifts from the pot’s bottom.

Let the brown dough cool occasionally, then fold in the egg until the dough is smooth and elastic.

Roll out the dough on a floured surface to about 0.5 cm thickness, cut circles of roughly 8 cm diameter, and fill each with pitted plums, apricots, diced apple and raspberries.

Close the dough around the fruit and shape into dumplings.

Bring a large pot of lightly salted water (about 4 L) to a boil, add the dumplings and simmer for about 8 minutes; stir occasionally so they don’t stick to the bottom.
