Broccoli Salad with Yogurt Dressing

Ingredients
- 1 large broccoli
- 250 g Cherry Tomatoes
- 0.5 bunch spring onions
- Salt
- Pepper (freshly ground)
- juice of one lemon
- olive oil
- 4 tbsp whole milk yogurt

Wash the broccoli and cut into florets. Wash the tomatoes and spring onions. Blanch the broccoli in boiling salted water until al dente, then shock it in ice water and drain. Halve the tomatoes.

Trim the spring onions and slice into rings. Mix salt, pepper, lemon juice, yogurt, and 3 tbsp oil. Arrange the broccoli, tomatoes, and spring onions on a plate and drizzle with the sauce before serving.
