Ingredients

  • 30 g hazelnuts
  • 800 g stalk broccoli
  • Salt
  • 1 onion
  • 1 clove garlic
  • 1 piece fresh ginger (ca. 2 cm)
  • 4 tbsp wine vinegar
  • 6 tbsp Olive oil
  • pepper (from grinder)

Instructions

    Roast the nuts in a dry pan until fragrant, then remove, cool and chop finely.

    Rinse the broccoli, trim and boil in salted water for 5-6 minutes to keep a slight bite.

    Peel the onion, garlic and ginger and dice very finely. Combine with vinegar, oil, salt, a pinch of sugar and pepper to make a dressing and taste.

    Drain the broccoli, rinse under cold water, then toss with the vinaigrette and nuts. Let sit briefly before arranging on a plate for serving.
