Artichokes with Chili Marinade

Ingredients

  • 6 small young artichokes
  • Salt
  • juice of one lemon
  • Salt
  • black pepper (freshly ground)
  • 4 tbsp white wine vinegar
  • 10 tbsp olive oil
  • 0.5 carrot (sliced)
  • 1 tbsp coarsely chopped parsley (or thyme leaves)
  • 1 onion (sliced)
  • 1 clove garlic, minced
  • 1 red chili pepper
  • 1 sprig thyme

Instructions

    Trim the stems of the artichokes, remove the lower leaves and cut off hard leaf tips.

    Cook the artichokes in boiling salted water with lemon juice and thyme for about 30 minutes, then remove and let drain briefly.

    Whisk vinegar, oil, salt and pepper into a dressing. Wash the chili, halve it, remove seeds and white membranes. Mix the dressing with carrot slices, herbs, onion and garlic. Add the artichokes and chili, mix thoroughly and let rest for a few minutes. Serve with baguette.
