Paprika Quiche with Thick Beans

Ingredients

  • 150 g flour
  • 75 g butter
  • 40 g grated Parmesan
  • butter (for the baking pan)
  • 2 red bell peppers
  • olive oil
  • 250 g thick beans
  • 1 onion
  • 2 tbsp olive oil
  • 150 g cream cheese
  • 250 ml Whipping Cream
  • 75 g freshly grated cheese (e.g., Parmesan)
  • 2 tbsp fresh chopped thyme
  • 3 eggs
  • Salt
  • pepper (from the mill)
  • nutmeg

Instructions

    Knead the flour with butter, Parmesan and a little cold water until smooth. Wrap in cling film and chill for about 30 minutes.

    Preheat the oven to grill mode. Butter the quiche pan.

    Wash, halve, trim the bell peppers and place skin side up on an oiled baking sheet. Grill under the broiler for about 10 minutes until the skins blister. Remove, cover with a damp towel to cool, then peel off the skins.

    Switch the oven to 180°C fan.

    Blanch the beans in salted water for 6-8 minutes, shock in ice water and drain (peel if desired). Peel and halve the onion, slice into strips. Sauté in hot oil until translucent, add beans and peppers, season with salt and pepper, then set aside.

    Whisk cream cheese with whipping cream, grated cheese, thyme and eggs until smooth. Season with salt, pepper and nutmeg.

    Roll out the dough and line the pan. Distribute the vegetables over it and pour the egg mixture on top. Bake in the oven for 40-45 minutes until golden brown.
