Broccoli Omelette

- 500 g broccoli
- Salt
- 8 eggs
- 2 tbsp milk (1.5% fat)
- 1 tsp curry powder
- 1 tsp black cumin seeds
- Pepper (freshly ground)
- 2 tbsp Vegetable oil
- 150 g cream cheese (0.2 or 13% fat)

Wash the broccoli, cut into florets and blanch in boiling salted water for about 5 minutes until slightly firm. Whisk the eggs with milk, curry, cumin, salt, and pepper well.

Add 1 tsp oil to a hot pan and spread it evenly. Pour one quarter of the egg mixture into the pan and use a spatula to push from the edges toward the center repeatedly until the omelette starts to set. Spread one quarter of the broccoli and cream cheese over it, do not stir further, and let it fully set. The omelette should remain juicy and slightly glossy on top. Cook three more omelettes in the same way. If you need to speed up, use two pans at once.
